Among the other things November is known for, it is also Diabetes Awareness month. I know, I know. I mean, I bake sweet treats with everything that tastes good and is okay in moderation! Don't forget, I am a nurse also and I am compelled to share some knowledge...with a baking twist. Did you know (I'm sure you do) that there are some ingredient exchanges that may reduce the calories, reduce the carbs and/or reduce the fat?! AND you add fiber and healthy oils!!! Sign me up, right?! Ok, so here are some tips for substitutions
1 cup sugar=1 cup unsweetened applesauce (reduce the liquid in the recipe by 1/4 cup)
1 cup butter/oil can be substituted with 1/2cup applesauce + 1/2cup butter/oil
1 cup butter can be substituted with 1cup pureed avocado
1 cup oil/butter can be substituted with 1 cup of mashed bananas
1 cup butter can be substituted with 3/4cup prunes blended with 1/4cup of boiling water
Not so bad, right? So maybe you can commit to trying the substitutions leading up to Thanksgiving...at a minimum!
